UncommonPancakes

I posted this recipe in a comments thread at Balloon Juice, and thought I would share it with you.



UncommonPancakes

1 1/2 cups all-purpose flour
1/2 cup yellow cornmeal
1 tablespoon baking powder
3 large eggs
1/2 teaspoon salt
1 1/2 teaspoons vanilla extract
3 tablespoons sugar
2 cups Half & Half

Preheat griddle to 325 degrees.

Separate the eggs and beat the whites until they are stiff. Add yolks and vanilla to dry ingredients in large bowl. Pour in Half & Half. Fold in egg whites.

Mix batter only until large lumps disappear. Do not mix until completely free of small lumps. Overmixing makes pancakes chewy, rather than light and fluffy.

When griddle reaches 325 degrees, spray light layer of non-stick cooking spray.

Ladle batter onto griddle. Flip over when top is completely covered with bubbles. Do not press down after flipping. Remove pancake from griddle when you gently lift the edge and see that the second side is brown.

Microwave full bottle of pure maple syrup for 90 seconds (remove the cap first). Drown stack of pancakes in warm syrup and butter.
